Minnesota turned traditional marriage upside down today with the senate passing the marriage equality bill. To celebrate the sugary goodness that is love and a bit of a messy time getting to the final product, I give you the Pineapple Upside Down Cake.

Pineapple Upside Down Cake

Ingredients
Topping
  • 1 Cup Organic Sugar
  • 2 Tablespoons Molasses
  • 1/2 Cup Butter
  • 1 20 Ounce Can Of Pineapple (Slices Or Chunks)
Cake
  • 1 3/4 Cups Flour
  • 1 1/2 Tablespoons Corn Starch
  • 3/4 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1 3/4 Cups Sugar
  • 1 Cup Butter (2 Sticks) Softened Room Temperature
  • 4 Large Eggs
  • 1 Teaspoon Vanilla
  • 3/4 Cup Fage Non Fat Yogurt

Turn a sauce pan on to medium. Mix sugar and molasses in a bowl until it resembles brown sugar. You could just use brown sugar instead, but I like this flavor better. You can add more or less molasses depending on how dark you want your caramel and the darkness of the flavor. Add the sugar/molasses mixture to the butter in the sauce pan and melt until it is bubbling. Once the sugar has melted (do not stir this), pour it into a 10" non stick cake ban with 3" sides. I use a spring form pan which leaks a bit in the oven so I put a jellyroll pan beneath it to catch the drips. Arrange the pineapple slices or chunks in a single layer on top of the caramel.

Preheat the oven to 325 degrees F. Sift the flour, corn starch, baking powder and salt together. Stir lightly to mix. In a second very large bowl beat the sugar and butter together with an electric mixture until it is light. Add eggs individually, beating after each one. Beat in the vanilla. Add the dry mixture in 3 to 4 additions alternating with the yogurt. Beat well after each addition. Pour the cake batter over the pineapple topping. Bake the cake until tester inserted into the center comes out clean. About 1 hour 25 minutes. Cool the cake on a pan on a rack for 10-15 minutes. Turn cake upside down onto a platter. Serve warm or at room temperature.

If you use chunks, be prepared for them to fall out a bit. I'm okay with that because it makes it just a little bit rustic. In the version at the top of this page, the cake also stuck a little in the middle of the pan, so i just arranged the pineapple chunks on top. Once you cut and serve, no one will complain. Believe me, the flavor and lightness of this cake is worth it.

Pineapple cake is the best sweet cake. I love to cook and bake, the recipe seems interesting. I must try it. The moist texture of the cake made my mouth full with water. Seriously, it looks yummy, Man! I am starting to feel hungry again. I must try it and make the john happy.
